Black Bean & Quinoa Patty Recipe

Yields 4 Patties

Ingredients:

  • 2 cups canned low sodium black beans, set ½ cup aside
  • 1 teaspoon olive oil
  • 2 tablespoons diced yellow onion
  • 2 tablespoons diced canned roasted red pepper
  • 1 tablespoon diced green onion
  • 2 tablespoons chopped cilantro
  • 2 teaspoon A1 steak sauce
  • 1 teaspoon Mrs. Dash seasoning or organic salt free seasoning
  • ¼ teaspoon ground cumin
  • 1 teaspoon chopped garlic
  • 1 cup cooked quinoa
  • 4 tablespoons instant potato flakes

 

Procedure:

  1. In a preheated small fry pan sauté onion, garlic, and the roasted red pepper with the olive oil. Cook until translucent. Set aside when ready.
  2. In the food processor add all ingredients and blend until incorporated.
  3. Place the mixture in the food processor into a small bowl, add the rest of the black beans and mix well.
  4. Using a ½ cup dry measuring cup begin to portion out the mixture, then shape each portion into round patties.
  5. Let the patties rest in the refrigerator for about 30 minutes, then cook in a nonstick pan or on a hot grill. Serve on bread with lettuce and tomato or with rice and vegetables.

 

MCI’S Cold Pressed “Grow2Heal” Turmeric Shot

Makes approximately 3 cups.

Ingredients:

  • 2 cups organic turmeric  - rinsed and chopped
  • 2 cups organic ginger root - rinsed and chopped
  • 1.5 large organic carrots - rinsed
  • 1.5 organic oranges - rinsed
  • 1.5 organic lemons – rinsed
  • 9 ounces coconut water
  • Pinch cayenne pepper
  • 1.5 cup orange juice – pulp free
  • Pinch ground cardamom

 

Procedure:

  1. Proceed to press the turmeric, ginger root, carrots, oranges, and lemons in to a food safe container.
  2. Mix in the rest of the ingredients. Serve as soon as processed or serve with ice or chilled.
  3. Enjoy!
